Scrambled Tofu

Yes, scrambled tofu. I know it sounds a bit weird, but it is DELICIOUS! It is basically stir-fry with crumbled up tofu and curry. And the best part is you can pretty much put in all the veggies your little heart desires. Personally, I am slightly obsessed with onions, spinach, and mushrooms, so those pretty much make it into any veggie dish I cook up. And I like my scrambled tofu with a LOT of veggies. Feel free to put in any of your favorite veggies, like broccoli and bell peppers. The following recipe is more of a guideline.
I know it is technically a "breakfast food," but it also makes a great lunch or dinner. Scrambled tofu also tastes great reheated, so you can make it the night before and store it in the fridge if you know you're going to be short on time in the morning.

Ingredients
  • 1 package firm tofu
  • 1 sweet onion, chopped
  • 1 or 2 handfuls of spinach
  • 4 white mushrooms, sliced
  • 1/2 cup broccoli
  • 1/2 a can of kidney beans or black beans, rinsed
  • 1 tbsp curry
  • 1 tbsp turmeric
  • 1 tsp ginger
  • 1/2 tsp garlic
  • salt to taste
  • sprinkle of paprika (optional)
  • Olive oil or canola oil for sautéing.

  1. Drain the tofu and then crumble the tofu with your hands into a bowl. I'm usually not too thorough with the draining, but oil and water are not a pleasant mix over heat. And if you're feeling super organized, pre-mix all the spices in a small bowl.
  2. Sauté the chopped onion over medium to high heat for a couple of minutes. Add in the mushrooms and stir them around to make sure they get some oil. Cook for another 2-3 minutes or so until the mushrooms start to brown a bit.
  3. Now it's time to add broccoli (if you so choose). If you like your broccoli soft, you may want to steam or boil it a little bit beforehand. Otherwise, just toss in some small pieces for a few minutes. 
  4. Add in the spinach. It should take maybe a minute to get all of it to wilt.
  5. Now add the tofu before the spinach burns. Stir everything together and then mix in spices until the tofu is all evenly yellow. Salt to taste
  6. Mix in the beans last. They only take about a minute to heat up.
  7. Serve and enjoy!
